In rosť wines, the skins are removed after fermentation has begun, thus producing a light pink color. Rosť wines are a compromise between reds and whites. One type of Rosť is called Blanc de Noir where the juice of red grapes are allowed contact with the skins for a very short time (usually only a couple of hours). These pink dinner wines, as they are sometimes called, can be served with almost any dish, but are considered best with cold meats, pork, and curries.
